White Chocolate Cherry French Clafloutis
It’s that time of year again...the day when you look back on all previous years and are reminded of the changes, challenges, and celebrations that preceded this day. Yes, it was my birthday. It seems like the older I get the faster this day creeps up on me. Can anyone else relate?
I’m
38. Yikes, why do I still feel like I’m only 30? It’s as if time is circling around me and I can’t grab it to just slow it down a little. Then I look in the
mirror and all the kid derived sleep deprivation under my eyes definitely tells me, um you better believe it, you’re 38. Ahh!
My
family always asks what I want for my birthday, and usually I don’t
have the time to stop and think of anything particular or grandiose. But this year
there were a couple things on my list...a new yoga mat and some yoga
wear. Go figure. And those things I did receive.
My mom is always the one that surprises me with unique and thoughtful gifts that are a always a great addition to my kitchen. Pieces that I will hand down to my kids and cherish.
This year she gave me quite a few Nambe pieces, one of my favorite kitchenware
designers. In fact when I opened my new Nambe colander I shrieked. My
brother looked over at me and said, “A colander and a fruit bowl for a
birthday present?” with a snarky look.
I guess only a true home cook would appreciate such a special gift. And I’m in love...

It didn’t take long for this serious fruit lover to hop into my kitchen and rinse off some fresh fruit in the colander and store them in my new fruit bowl. Speaking of fruit, with cherry season upon us, I’ve definitely eaten my fair share so far. I mean really you can't blame me, they are quite addicting even with those little nuisance pits inside. It never seems to stop me! I decided to incorporate them into our morning breakfast since I always have quite a plethora on hand. I decided to make a French Clafoutis. These are unbelievably scrumptious if you’ve never had one. They are a sweet, light creamy custard with baked fruit within. The hint of almond extract takes the flavor over the top. Cherry is a traditional element to most clafoutis. I decided to make mine with the addition of chocolate because everything is better with chocolate, am I right? Although this classic is considered to be a dessert, it is breakfast in our house.
My
husband and son have that chocolate gene. Muffins, cookies, pancakes,
you name it, they ask me to add chocolate to it. So naturally I had to
add white chocolate chips to my cherry clafoutis.
It’s
actually a very simple recipe which makes this ideal for a quick
morning breakfast. I had this whipped up in no time and hubby had it for
breakfast before heading off to work.
It didn’t last long and is always a hit. It doesn’t matter
what fruit I have on hand, I just add it to the custard and bake it off
to perfection.
Last week I posted a picture of my white chocolate cherry clafloutis on Instagram and had several requests for my recipe. So it brought me back to my blogging days, and so here it is! You must try!
White Chocolate Cherry Clafloutis (Serves 4-6) Approximately 45 minutes - EasyIngredients
1/3 cup all-purpose flour (I use King Arthur Organic AP)
3 Tbsp granulated sugar
1/8 tsp salt
1 Tbsp melted butter along with 1-2 tsp to coat pan
1 large egg (I prefer Vital Farms or Publix Greenwise Organic)
1/2 teaspoon Nielsen Massey Vanilla bean paste (or can sub with pure vanilla)
1/2 teaspoon Nielsen Massey Almond Extract
1 cup of pitted bing cherries (enough to fill the bottom of your skillet or pan)
1/2 cup white chocolate chips
Preheat your oven to 350F. Coat your 6 1/2" cast iron skillet or pan
with melted butter to prevent sticking. Arrange the chocolate and
cherries in the bottom of the skillet and set aside. In a small bowl,
whisk together the egg, milk, 1 Tbsp melted butter, salt, almond and
vanilla bean. Sift the flour and sugar in a separate bowl. Make a well
in the center of the dry ingredients and slowly pour the wet ingredients
in while whisking continuously but gently preventing any lumps. Pour
mixture slowly over the cherries & chocolate. Place in middle rack
of oven and bake for approximately 30-35 minutes or until the top is
lightly browned. Serve immediately with a generous dusting of powdered
